8 frozen hash brown patties
4 C. (16oz) shredded cheddar cheese
1 lb. cubed fully cooked ham (2 cups)
7 eggs
1 C. milk
1/2 tsp. salt
1/2 tsp. ground mustard
Place hash brown patties in a single layer in a greased 13x9" baking dish. Sprinkle
with cheese and ham. In a bowl, beat eggs, milk, salt & mustard. Pour over ham. Cover
and bake at 350 for 1 hour. Uncover; bake 15 minutes longer or until edges are golden
brown and a knife inserted near the center comes out clean.Southwestern Eggs

1 pound grated cheddar cheese
1 pound grated jack cheese
1 dozen eggs
1 (7 ounce) can chilies, diced
1 (16 ounce) carton sour cream
Preheat oven to 325 degrees. Mix cheese, sour cream and chilies together. Beat eggs, add
to cheese mixture. Pour into a greased 9"x13" baking dish. Bake for 1 hour.
Scrambled Egg Muffins

12 eggs
1/2 pound sausage
1/2 cup chopped onions
1/2 cup shredded cheddar cheese
1/2 cup chopped green pepper
salt to taste
garlic powder to taste
Cook sausage and set aside to cool. Mix eggs, salt and garlic powder in a
large bowl; add onions, cheese, green pepper and sausage. Grease muffin
tins with cooking spray or butter. Fill each muffin cup with 1/3 cup of
mixture. Bake at 350 degrees for 20 - 25 minutes or until a knife inserted
in the middle comes out clean. |

Waffles With Pineapple & Coconut

1 1/4 cups sifted flour
1/2 tbsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 egg whites
1 egg yolk
1/4 cup canned or fresh coconut milk
5 tbsps unsalted, melted butter
1 cup sour cream
3/4 cup chopped, fresh pineapple
Procedures
Sift together dry ingredients.
Set aside.
Mix together beaten egg yolk, sour cream, coconut milk, melted butter, and
chopped pineapple with some juice.
Add to flour mixture, mixing well.
Fold in gently whipped egg whites, and pour into heated and lightly oiled
waffle iron.
Cook until golden brown.
Serve with sliced banana (optional) and pure maple syrup. Yield: 4 ServingsEgg Nests

1 1/4 pounds of ground beef (uncooked)
1/2 cup bread crumbs
4 Tbsp grated Parmesan cheese
4 potatoes, mashed
8 eggs
7 Tbsp melted butter
Salt & pepper to taste
1/ Preheat oven to 350 degrees
2/ Mix meat, bread crumbs, cheese, mashed potatoes & salt & pepper in bowl.
3/ Make nests by forming 8 balls out of the meat mixture. Flatten and make an indentation
in the center.
4/ Place in buttered ovenproof dish & cook for 30 min.
5/ Remove from oven
6/ Crack egg into nest, sprinkle with salt & pepper to taste
7/ Return to oven for 8-12 minutes.
Sausage Squares

1 cup Buttermilk Bisquick Mix
1/3 cup Milk
4 tbls Mayonnaise
1 lb Italian Pork Sausage
1/2 cup chopped onion
1 egg
2 cups grated cheddar cheese
* 2-4 oz cans chopped green chilies
Stir Bisquick mix with milk and 2 tbls mayonnaise ; spread into greased
13 x 9 pan. Sauté sausage and onion ; drain fat, spread over Bisquick
mix. Beat egg with remaining mayonnaise, cheese, and chilies. Spread over meat. Bake at 375
degrees for 25 min. Cut into one inch squares.
* Use only one can of chilies if you prefer less spicy flavor. |
