1/4 cup flour
2 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons oil
1 egg white
t tablespoon water
dash of salt
Prepare 8 fourtunes ahead of time. Sift together flour, sugar, cornstarch and salt. Add
oil and egg white; stir until smooth. Add water and mix well. Make one cookie at a time:
Pour 1 tablespoon batter onto lightly greased skillet, spreading batter to a 3 1/2 inch
circle. Cook over low heat until lightly
browned. With wide spatula, lift and turn; cook one more minute.
Working quickly, place cookie on a clean pot holder. Place fortune in center; flold cookie
in half and fold again over edge of bowl. Cool.Egg Foo Yung

6 eggs
1/8 tsp. pepper
1 c. thinly-sliced celery
1 c. fresh bean sprouts
1 med. thinly-sliced onion
4 Tbsp. oil, preferably peanut
In medium bowl, lightly beat eggs with pepper; set aside. In large skillet over medium
heat, stir-fry the veggies in 2 Tbsp. oil until crisp-tender.
Drain off any cooking oil/veggy juice; add to eggs and mix well. Heat 2 Tbsp.
oil in skillet on medium-high heat, until hot but not smoking. Pour 1/2 c. egg mixture
into pan, as many at a time as you can easily handle. When edges
are brown, flip each "pancake" and brown the other side. Serve on hot rice
with sauce spooned over all.
EFY sauce
1 c. water
1 bouillion cube, vegetable , chicken or beef
2 Tbsp. each soy sauce and corn starch
1/2 tsp. sugar
1/4 tsp. garlic powder
1 Tbsp. dry sherry, if desired (and I don't, I hate sherry)
Mix all sauce ingredients well, in small saucepan. Turn burner to medium-high
and bring mixture to a boil, stirring all the while. It'll thicken when it
comes to a boil; when it does so, remove from heat and let it cool a bit
before serving. I like to make this before the EFY pancakes." |

noodles

1 1/2 pounds ground beef. {I use ground chuck or sirloin}
2 packages {3 oz. each} oriental flavor instant ramen noodles.
2 cups frozen vegetables mixture.
1/4 teaspoon ground ginger.
2 tablespoons thinly sliced green onion.
1. in large nonstick skillet, brown gound beef over medium heat for 10 to 12 minutes or
until beef is no longer pink. Remove with slotted spoon; pour off drippings. Season beef
with one seasoning packet from noodles and set aside.
2. In same skillet, combine 2 cups water, vegetables, noodles {broken up}, ginger and
remaining seasoning packet. bring to a boil; reduce heat, cover; simmer 3 minutes or until
noodles are tender, stirring
occasionally. return beef to skillet; stir in green onion. makes 4 servings.Chinese Broccoli
2 pounds broccoli florets
1/2 cup butter
1 (5 ounce) can water chestnuts, diced
1/4 cup lemon juice
3 Tablespoons onions, minced
salt and pepper to taste
Steam broccoli until tender, drain. Melt butter, add salt, pepper, water chestnuts and
onion. Cook over medium heat for 3 minutes. Add lemon juice and soy sauce. Toss broccoli
and heat thoroughly.
Fried Bean Sprouts
2 cups bean sprouts
2 green onions, finally chopped
5 Tablespoons Chinese cabbage, chopped
3 Tablespoons chicken stock
3 Tablespoons sesame oil
1 teaspoon salt
In large skillet, heat oil until hot. Add onion,
stir-fry for 30 seconds. Stir in bean sprouts and cabbage.
Stir-fry for until translucent. Add salt, stir-fry for
1 1/2 minutes. Add chicken stock, and stir-fry for an additional 1 minute.

1lb ground cooked turkey
1lb pkg cooked / cold spaghetti
1 large onion cut into long thin slices
1/4c soy sauce (more or less to taste)
oil enough to cover the bottom of a dutch oven-type pan
Heat oil, add onions and sautee until clear, add cooked ground turkey and soy sauce. Stir
with wooden spoon. Slowly add cold cooked spaghetti. Toss to blend. Add more soy as
necessary to coat spaghetti. |
