Quick & Easy Biscuits

Self rising flour
buttermilk
Place flour in large bowl add enough buttermilk to make dough. Knead dough on floured surface, cut with cutter and place on greased baking sheet. Bake at 400 degrees until golden brown. There are no specific measurements for this recipe. Make as much as needed.

Easy Rolls

1 cup self-rising flour
1/2 cup milk
1 teaspoon sugar
2 tablespoons mayonnaise

Preheat oven to 350 degrees. Mix together flour and milk. Add sugar and mayonnaise. Pour into slightly greased muffin tins and bake for 12 to 15 minutes.
Yield: 6 rolls

CREAM CHEESE BARS

1 egg, separated
2-8oz. cream cheese
1 tsp. vanilla
1-1/2 C. sugar, divided
2-8oz. crescent rolls
1/2 C. chopped pecans
1 tsp. cinnamon

Mix egg yolk, cream cheese, vanilla and 1 cup of sugar. Stretch 1 package of crescent rolls to fit 9x13" pan. Spread cheese mixture over rolls. Cover with other package of crescent rolls stretched to fit. Beat egg white until fluffy. Brush on rolls. Combine 1/2 C. sugar, cinnamon and pecans. Sprinkle on top. Bake @ 350 for 30 minutes, cut into squares. Makes 24 - 2" squares

Applesauce Cinnamon Muffins

1 1/4 cups Oat Bran Cereal (uncooked)
1 cup whole wheat flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsweetened applesauce
1/2 cup honey
1/2 cup vegetable oil
1 egg
1 teaspoon vanilla
1/4 cup walnuts (optional)

Preheat oven to 375. Coat 12 medium-size cups with vegetable oil or line with paper baking cups. ( Or prepare mini-muffin tins for 36 - 40 mini-muffins) In medium bowl combine Oat Bran cereal, flour, cinnamon, baking powder,soda,and salt. In large bowl combine applesauce, honey, oil, egg, and vanilla. Stir in dry ingredients: mix well. Stir in nuts. Fill prepared muffin cup almost full. Bake 15-20 minutes or until golden brown. Serve warm.

Pecan Roll
1/2 cup melted Butter
3 cups brown sugar
1 pound pecan halves
prepared bisquit dough

Prepare biscuit dough as directed. Roll the dough to a 1/4 inch thickness. Spread the melted butter over the dough and sprinkle on brown sugar. Cover with pecan halves and roll into a roll. Cut in 1 inch slices and place close together on a butterd pan. Bake at 450 degrees until golden brown.

Corn Bread   
1 cup corn meal
1/4 cup flour
1/2 cup milk
1 Tablespoon butter, melted
1 egg
1/2 teaspoon salt

In large mixing bowl, combine all the dry ingredients.
Beat egg, mix with milk. Add milk mixture to dry ingredients.
Add melted butter and pour batter into greased pan.
Bake in pre heated oven at 425 degrees for 25 minutes.


Corny Cornbread

2 beaten eggs
8 oz. corn muffin mix
8 oz. cream corn
8 oz. whole kernal corn(drained)
8 oz. sour cream
1/2 cup melted margarine

Mix and pour into an 8x11 greased pan. Bake at 350 for 30 minutes.
Sprinkle with grated cheese (optional) and bake for an additional 15 minutes.

PinkHug's Peanut Butter Bread
2 cups all-purpose flour
1/3 cup sugar
1 teaspoon salt
4 teaspoons baking powder
1 1/2 cups milk
1/2 cup peanut butter

Preheat oven to 375 degrees. Combine dry ingredients. Add milk and peanut butter. Pour into a greased 8 x 4 x 3-inch loaf pan. Bake for approximately 50 minutes. Great with homemade jam. Yield: 1 loaf

Banana Nut Bread

Ingredients
one half cup butter
1 cup white OR brown sugar (try half and half)
2 large eggs
2 cups of flour
one half teasp of baking soda
1 and a half cups of mashed bananas
one half cup chopped walnuts

Directions
Cream the butter and sugar. Add the eggs and beat well. Combine the dry ingredients and stir into creamed mixture alternately with the mashed bananas.
Fold in the nuts last. Pour into a buttered loaf pan, let stand at room for 20 minutes and then bake in oven @ 350 for 45 minutes to one hour.

For something a little different ? Banana Peanut Bread: Use only ONE cup mashed bananas and add 3/4 cup crunchy peanut butter...yummmm

BISCUIT BARBECUPS

1 10-ct. canned biscuits, or 1 biscuit recipe (making about 12 biscuits)*
1 # hamburger   
1 T. instant or ¼ c. chopped fresh onion
¼ t. garlic powder   
1 c. barbecue sauce
1 c. grated cheddar or American cheese

Preheat oven to 400º. Spray 10-12 muffin cups with Pam. Brown hamburger and onion; drain fat. Stir in sauce and garlic powder. Cook 1 minute, stirring.
Meanwhile, put biscuit dough together or open can of biscuites. Using 1 flattened canned biscuit, or 1 lump of dough that would make about 1 biscuit,
press in bottom and up sides of a muffin tin. Spoon meat mixture into each biscuit; sprinkle with cheese. Bake 12 minutes or until biscuits are golden brown. Cool 1 minute; remove from pan.
*Because of the way you're using the biscuit dough, you can cheat and use canola oil instead of shortening. Don't knead the dough, since you're going to be smushing it in the muffin tins.

Sausage Bread

What you'll Need...
1 pound of sausage (any kind - I like the hot)
1 can of Pillsbury (or equivalent) "French Loaf" Bread
1 bag of cheese (shredded works best - mild cheddar)
OPTIONAL:
Diced Onions
Diced Bell Peppers

Brown the sausage in a skillet. (add optionals in with sausage)
Roll out the French Loaf on a rectangle cookie sheet.
Place a small layer of cheese on the top of the dough, towards the center.
Scoop out half of your sausage on top.
Another layer of cheese.
The Rest of sausage.
And, finish off the cheese on top.

Take the two long sides of the dough and overlap them. Pull the ends over also to close off the inside. Flip the Loaf over, where the seam is on the bottom. Place in oven at 350. Do not go by instructions on the can. It only takes about 10 minutes max to have a golden brown loaf.

Remove from Oven and let cool for 10 minutes. Slice just like bread!
